In Memoriam: Reach for the Stars with Sally Ride

Sadly, we learned today that Sally Ride, the first American woman in space, UC San Diego Professor Emeritus, and an advocate for science education, passed away at her home in San Diego. She was 61.

The UC San Diego campus, where Ride became Professor of Physics in 1989, is already relatively quiet this summer break, but the news of Ride’s premature passing due to pancreatic cancer has created a more somber tone. Her loss will obviously also be felt at the San Diego-based company she founded, Sally Ride Science, which provided science education materials and assistance to teachers and schools.

In February 2011, Ride visited UC Berkeley to deliver the UC Berkeley Physics Regent’s Lecture titled “Reach for the Stars with Sally Ride.” In the talk, which aired on UCSD-TV last April, Ride advocates for a stronger foundation of math and science education by describing her own path into the space program. There’s no better way to honor this distinguished woman’s memory than listening to her heartfelt dream that every student — not just future rocket scientists — learn to love math and science.

Here are five simple and healthy snack ideas for a hot summer day:

1. Fresh seasonal fruit of any kind
2. Greek yogurt and fruit
3. Whole wheat pita bread with peanut butter, almond butter or hummus
4. Fresh vegetables such as ripe cherry tomatoes, bell pepper strips, cucumbers, with guacamole dip
5. Small portion unsalted nuts or string cheese stick with fruit

We’ve kicked off the new season of TCOYD with a “Diabetes Hero,” and now’s your chance to be your own hero and “Get Your Move On!” Here’s TCOYD’s resident fitness expert Michelle Day with a tip to keep your diabetes in check and your body fit.

You can strengthen your legs in the water by doing flutter kicks. Here’s how:

  • Hold on to the wall, face down and kick for 5 minutes.
  • Turn over, hold on to the wall and work your adductors and abductors (inner and outer thighs) by opening and closing your legs.
  • Using water resistance will help you get your legs in shape in no time.

Robert’s Salmon Skewers of Love
Recipe by Chef Robert Lewis The Happy Diabetic
Salmon is truly a fish for all seasons. It can be prepared in so many tasty ways, and this is one of my favorites. Baked or grilled, the light marinade makes this dish unforgettable. It’s easy and quick to prepare, but your friends will think you cooked all day.

Makes 4 servings

Ingredients & Methods
2 medium-size fresh salmon filets
2 tablespoon fresh garlic
1⁄4 cup extra virgin olive oil
1 teaspoon fresh basil
2 tablespoon fresh lemon juice
1 red pepper
1 green peppers
1 red onion
2 large Portobello mushroom cut in ¼’s
4 bamboo skewers

– Skin salmon and cut it into 1-inch pieces if your fishmonger or butcher hasn’t already done the job for you.
– Mix garlic, oil, basil and lemon juice in a bowl. Combine with salmon and refrigerate for 2 hours.
– Place skewers in cold water for 10 minutes before building them. (This will keep them from burning.)
– Cut veggies into 1-inch pieces.
– Alternate peppers, onions, mushrooms, and salmon on skewers.
– Place on a hot grill for 8 to 10 minutes, turning often, or place on a baking sheet in a 375- degree oven for 10 to 12 minutes.
