Stem Cells and the Future of Medicine

There’s a lot of talk about the promise of stem cells, but do you really understand what’s getting researchers so excited?

Well, now’s your chance to learn from the man who literally wrote the book on it, Lawrence Goldstein, Director of UC San Diego’s Stem Cell Program, and author of Stem Cells for Dummies.

In “Stem Cells and the Future of Medicine,” the latest program from the Stein Institute for Research on Aging, Dr. Goldstein shares the basic principles of stem cells and examines the promise they offer and how they can be safely and effectively employed.

With the new school year fast approaching, it is time to start stocking up on healthy brown bag lunch ideas for kids as well as adults. Here are some fresh ideas to liven up any lunch box!

1. PB and J on whole wheat bread with fresh fruit and water
2. Lean ham, turkey or roast beef sandwich on rye with mustard, lettuce, tomato and a side of fresh veggies such as carrots, bell peppers, cucumber slices
3. Sandwich wrap on whole wheat tortilla with swiss cheese, lean turkey, fresh spinach, and avocado
4. Greek yogurt, slice of whole grain bread or crackers, fresh fruit and unsalted nuts (about ¼ cup)

Some of the apps I like to use on my smart phone are every.whereexercise, BodyFitness, menshealthworkout and womenshealthworkout. On my iPad I like using the FitnessClassApp. This app lets you download classes anywhere at anytime. I also frequently go to YouTube and keyword specific exercise forms such as Zumba, Yoga, Pilates, Resistance Tubes, Water Aerobics and Abdominal Workouts. Stay connected to get your workout on.

Chef Robert Lewis, also known as the “Happy Diabetic,” serves up fun recipes and helpful tips – with an extra helping of happiness – to keep you fueled!

Annie’s Veggie Boats

No dishes needed for this fun and healthy treat, bursting with antioxidants. Take this snack on the go, to a soccer game, or on a hike. This kid friendly recipe is fun to make as a team and even better to eat.

Ingredients

1 green, yellow, or red bell pepper, washed
1 bunch of celery, washed
1 carrot, washed and peeled
Pea pods
Your favorite buttermilk salad dressing (If you would like lower fat, substitute low-fat or nonfat dressing, and change nutritional counts accordingly. )

Directions

Cut the pepper in half (from side to side). Clean out the seeds from the inside and wash well. Now you have two pieces. One will be your pepper-shaped bowl.
Cut the other half of the pepper into skinny slices.
Cut the carrot into skinny sticks about 4 inches long.
Cut celery into skinny sticks so each one is about 4 inches long. Add the snow peas.
Put a little salad dressing in the bottom of your pepper-shaped bowl.
Put the sticks, carrot sticks, and pepper slices into the pepper bowl.
Now it’s portable! You can eat the veggies with a little dressing. Then when you’re finished with the veggies, you are ready to eat the bowl!
